Meal Plan for the Week of January 29 – February 3rd

This week was busier than I originally anticipated, but we still managed eat somewhat healthy.I still stand by that it is easier to eat healthy when you have a plan. There were so many times this week that I would have just gotten take-out, but I knew I could go home and easily whip up one of our meals! Luckily for me, my older kids love my home cooked meals and they are not really picky. My toddlers are my picky eaters, but I still serve them a little of whatever we are eating. They might also get a sandwich and extra fruit!

Mondays are typically busy after the kids come home from school with the kids appointments. Before we left for our appointments, I prepared our dinner.  We had extra pulled pork from one of our meals from the week before, so I decided to use it in Pork Shepherds Pie. I actually did not really follow the recipe. While I was helping the kids with homework I boiled potatoes. I let them boil a little longer so they would be easy to mash. I then warmed up our extra pork and threw in a pack of mix veggies. I put our pork mixture on the bottom of a casserole dish and spread the mashed potatoes on top of the mixture. To finish our preparations I sprinkled mozzarella cheese on the top.  I then rushed all my kids in the car. Bryce got home before we did so he could easily grab our prepared dish and place it in the oven. It was so nice to come home to our ready-made dinner.  I tell you in the past, on days like this, I would grab fast food on our way back home. Getting kids in and out of car, is so tiring. We typically do not make it back home until 6:30pm on Mondays.

Tuesday was such an exciting day for our family, because it was Elijah’s first pinewood Derby. Bryce wanted our family to arrive early so after homework time, I started on dinner.  I made Lemon Herb Salmon Zucchini from Skinny Fitalicious. Oh goodness this meal was so delicious, but because we were in a rush I did not get any pictures. I guess I will have to make it again!

Wednesday was another busy day. I got a very nice workout in the morning with my friend Ckaz!  Later I watched my friend’s little girl who is also one.  It was so much fun with three one year olds, but I did not have time to prepare our dinner (a crock pot meal). Luckily I had gnocchi, so I made ground turkey marinara gnocchi! So yummy. The babies approved of this meal!!

Thursday we made salmon shrimp and asparagus. Everyone in the family loved this meal.  My older kids have told me they love salmon! Win, I love it when they love healthy meals. Honestly though, in this family, you cannot go wrong with shrimp!

Friday we were on the go all day long, again I did not have enough time to prep crock pot meal. Guys I was so tempted in eating out. Instead I made  one pan italian sausages, cherry tomatoes, onions, and potatoes. So yummy. We enjoyed this meal during our family movie night. We watch The Goonies with the kids.  My siblings and I use to love this movie as kids, I loved watching this with our kids and seeing them enjoy it as well!

  • Gluten-free chicken nuggets (found at 99 cent store) and carrots
  • Sandwich – egg and cheese sandwich, ham and avocado sandwich, Tuna Sandwich, salmon patties
