Resolutions Check In – Including this Week’s Meal Plan

Alright it has almost been a week since I started my new years resolutions and I have to report it has been harder than expected to keep up on them. Keep in mind, it takes about 21 days to set a routine. As I am writing this, I just realized I forgot one of my goals scripture study. I will make  sure to get that in!

A review of my goals:

  1. Spiritual Goal: Daily Scripture Study –  I was able to do this 3 out of the 6 days since the new year.
  2. Physical Goal – I have gone on two long walks with friends this week.  In addition we have only had two gluten-free meals this week.
  3.  Intellectual Goal – Have not really done much to help with coding, but I am reviewing some blogging coursework I have taken in the past.
  4. Family Goal – I have done one extra snuggle time with my older kids. This one I really need to focus on getting those cuddle in.  Remember Confessions of An Adoptive Mom, it is not something that come naturally with my older kids.

  5. Emergency Preparation Goal – I have not started on our 72 hour kits. I am actually ok that I have not, but I do want to start scheduling time to do so!

Now did I hit the ground running with my goals? I would say no. Am I going to throw in the towel, that is a definite NO!!

I just realized that to be successful at my goals I really need to come up with a plan of action! In this post specifically, I am going to focus on the physical goal.

I want to make sure to get those long walks three times a week, even if it is just me! Now I do have a family goal of taking gluten and dyes out of our diet. This week I found this one is actually a hard goal to do if I do not have a plan or have ready.

I think what might make the biggest difference is weekly meal planning and prep. I have decided to share my weekly meal planning with all of you.

I have to disclose, that I am in no way an expert. In fact, in the category, I consider myself novice.  I am not the best in the kitchen and do not have the recipes on hand to accomplish this goal. I will be using Pinterest and Google to help me accomplish this goal. When providing a recipe or meal I will give the sources of where the recipes came from. Some meals will be super simple.  Remember I am a mom of four, and cannot put a lot of time in preparing meals, especially for lunch. I would love to hear your suggestions if you have found what helps.  As you might be able to tell, I am mostly focusing on dinners.

Monday

Breakfast

  • Gluten free cereal: Cheerios, corn chex, rice chex
  • Gluten free oatmeal and fresh fruit
  • Eggs, gluten-free toast, and fresh fruit

Lunch (kids and mom)

  • Gluten free chicken nuggets (found at 99cent store) and cucumbers

  • Sandwich – egg and cheese sandwich, ham and avocado sandwich

Dinner

This is how our slow cook chicken Parm turned out! Everyone loved it! I loved how tender the chicken was and the garlic taste!

Snacks

  • Almonds
  •  Fresh Fruit
  • String Cheese

Tuesday

Breakfast

  • Gluten free cereal: Cheerios, corn chex, rice chex
  • Gluten free oatmeal and fresh fruit
  • Eggs, gluten-free toast, and fresh fruit

Lunch

  • Gluten free chicken nuggets (found at 99cent store) and cucumbers
  • Sandwich – egg and cheese sandwich, ham and avocado sandwich

Dinner

This is how our 20- Minute Cheesy Enchilada Soup turned out! We loved the flavor! I have to say if you try this, do not forget to add avocados. The avocados completed the meal!

Snacks

  • Almonds
  •  Fresh Fruit
  • String Cheese

Wednesday

Breakfast

  • Gluten free cereal: Cheerios, corn chex, rice chex
  • Gluten free oatmeal and fresh fruit
  • Eggs, gluten-free toast, and fresh fruit

Lunch

  • Gluten free chicken nuggets (found at 99cent store) and cucumbers
  • Sandwich – egg and cheese sandwich, ham and avocado sandwich

Dinner

This has to be my family’s favorite meal! I love it, because it is fast and easy!
  • Gluten free Alfredo Basil Tomato Shrimp Pasta – Instant Family of Six Recipe
    • Ingredients: Bag of cooked shrimp (small) , fresh  diced tomatoes (you can use a can), fresh basil, gluten-free spaghetti pasta, can of Alfredo sauce

This has to be one of our family’s favorite recipes. We use the fresh tomatoes and basil from our garden. Mmm so delicious. Disclaimer – I am no chef, but this recipe I came up with on my own!

  1. Bring water to a boil in whatever pot you use to cook pasta.
  2.  Wash tomatoes and basil. Dice the tomatoes and chop the basil.
  3. In frying pan, add two tablespoons of olive oil, tomatoes, and basil. Stir the ingredients for about two minutes and add the shrimp. Do this until shrimp is heated.
  4. Add the Alfredo sauce. Stir the ingredients together. Add salt and pepper to taste.
  5. Add pasta to boiling water. Once pasta is cooked drain and add the pasta to sauce.
  6. Serve and enjoy.

  • Eggs, gluten-free toast, and fresh fruit

  • Gluten free chicken nuggets (found at 99cent store) and cucumbers

Dinner

This is how our Lemon Chicken and potatoes in foil turned out! Another win for our family! We enjoy fish and salmon is one of our favorites!

Friday

  • Gluten free oatmeal and fresh fruit

  • Our Family’s cheat meal – We like to go out to eat on Saturday

Wish us luck on this week of trying to eat clean! Next week I will update you in how it went and include another meal plan for the week and grocery list.

    Planning meals ahead of time is something I’ve always wanted to do. I’m sure it makes grocery shopping and cooking much easier. I can’t wait to see your next update on how it’s going!

      Well I have always wanted to do it too and now I am. I have to say I love knowing what I am going to make beforehand and knowing I have the right ingredients! I also managed to spend less at the grocery store. Proudly I can also say, I have not eaten out!
